Orange Chiffon Cake

Ingredient

egg yolk 400g, dextrose monohydrate 40g, salt 8g, sorbitol 80g, orange juice 140g, milk powder 20g, high ratio flour 400g, baking powder 8g, cooking oil 200g, orange emulco(optional) 1g, orange oil 8g( In batter )

egg white 800g, cream of tartar 2g and sugar 480g( In maringue, S.G.=0.2 )


Method
  1. Mix egg yolk, dextrose and salt with a hand whisk until smooth.

  2. Add sorbitol followed by orange juice.

  3. Sieve milk powder and flour together and blend in followed by cooking oil.

  4. Whisk egg white and cream of tartar on high speed for half minutes in an oil free mixing bowl.

  5. Add sugar and continue to whisk for two minutes on high speed.

  6. Reduce to medium speed for two minutes until a medium peak consistency.

  7. Transfer meringue into the batter in several stages and mix evenly with a spatula.

  8. Scale 630g batter into each chiffon moulds.

  9. Bake at 180 degree celcius for fifty-five munutes.

  10. Specific gravity (S.G.) of batter should be approximately 0.35 to 0.40

Life Of Week Six

This week, I have Management and Hygiene test. I had done my best in these tests. Next week, I have cake theory test. I hate breads and cakes theory. I hope I can pass the cake theory assessment test. This week, I bake some doughnuts, a Chocolate Gateau, and a Pandan Chiffon Cake. The Pandan Chiffon Cake is tasteless because I only put a little bit of pandan flavour. In addition, I went to Cameron Highland for a trip with my siblings and their friends during Friday afternoon and came back yesterday, Saturday afternoon. I ate a lot of sweet corns at the night market. I also went to visit Boh Tea Centre, Strawberry Farm, and water fall. My sister friends buy a lot of flowers for their mother because today is Mother's Day.

Week Five in Hostel and MIB

This week, I had make some pizza, a chocolate fudge cake and orange chiffon cake. These few breads and cakes are my favourite food. Besides, Thrusday was labour day. On that day, I went to KLCC with my friends. On Friday afternoon, I went to Mid-Valley with Shih Tyng. She introduced some Hong Kong food to me. The food was very delicious. This week I did not go to my siblings' house because I had a replacement class. It was Computing Level One lesson and I could not celebrate my sister's birthday. I was very upset, but I still learn a lot of things through internet which were teaching by the lecturer, Krishna. In addition, next week I have assessment test on hygiene and management. I hope I can answer all the question.
